Caviar lime exists for this purpose. Skip the mignonette, skip the lemon. The lime pearls burst on contact with the oyster — bright, briny, no acid wash.
Per dozen
- 12 freshly shucked oysters
- Two caviar limes
Method
- Slice each caviar lime across the middle.
- Gently squeeze each half so the pearls extrude.
- Scatter a few pearls across each oyster. Serve immediately.
